Hand-Held Mutton
Hand-held Mutton (Shouba rou) is probably the most common of Inner Mongolian specialties, a source of protein that the grassland nomads have long used. The dish is basically a large slab of meat that is on the bone, held in the hands, carved and then eaten. It is possible to be served a variety of meats in this style, including beef, horse and camel meat, but most of the dishes will be mutton.
