Mongolian Hotpot
Mongolian hotpot (Shuan yangrou) is probably one of the best known local specialties from Inner Mongolia. The principal raw material in this dish is the tender mutton that comes from the distant Hulunbei'er Grasslands, and this is pre-prepared by the restaurant into thinly sliced pieces. The hotpot is started by adding the meat, along with vegetables, vermicelli or tofu, into a pot of boiling water. The meat should be left in for around one or two minutes, then taken out and dipped into a tasty Mongolian sauce. You will find this specialty all around Hohhot, but the best place is probably the Malaqin Restaurant on Xincheng Xi Jie, a few blocks east of Hulunbei'er Lu. A typical meal costs about RMB35.
