　　 Huaiyang cai is the famous cuisine of the Middle and Lower reaches of the Yangtze River, which nowadays includes Jiangsu, Zhejiang, Anhui, and parts of Jiangxi and Henan Provinces plus Shanghai. Huaiyang cai centers on Yangzhou and Huai' an after Zhe (Zhejiang Province) cai and Hui (Anhui Province) cai became two among the Eight Cuisines of China. Huaiyang cai can be called the noble dishes in Chinese cuisines, taking center stage in several international banquets, from which we may know the status and characteristics of Huaiyang dishes within Chinese cuisines.
